Easy Indian Chicken Marinade
Add something special to your recipe repertoire. This simple marinade evokes the aromatic flavors of India. This recipe is the perfect flavor base in which to marinade chicken that will work with your favorite Indian meal. I like to use it with curries.
1 T coconut oil, warmed to a liquid*-OR-use 1 T coconut cream (solids in a can of coconut milk)
1 T curry powder
1 tsp ginger paste or freshly grated ginger
1/2 tsp garlic powder
1 T lemon juice
2 T orange juice
1 T water if needed
1 tsp chili paste (optional)
Chopped cilantro (optional)
Combine all ingredients in a large bowl. Use a whisk to mix if you have one.
Add raw chicken breasts and flip them over a couple times to coat with the mixture.
Place the chicken in Ziploc freezer bag and pour the marinade in also.
Label, date and throw it in the freezer! You’re all set.
This Indian chicken marinade will create a deliciously-flavored chicken breast that is the perfect protein to use in Indian dishes. I like to saute it in a chicken tikka masala sauce and serve it with basmati rice or naan.
*If your other ingredients are chilled, your coconut oil may start to solidify and get weirdly chunky-fear not-just pop your bowl in the microwave for 10 seconds or so to bring it all to a warmer temperature. Using the coconut milk cream will alleviate this problem.
